Lamb's the dish for Aus Day

Barbecued butterflied lamb leg with herb mayonnaise
Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 4
z 1½ kg leg of lamb, boned and butterflied
z 1 tbsp fresh rosemary leaves, chopped
z 1 tbsp olive oil
z 1 tbsp Dijon mustard
z A selection of raw and blanched seasonal vegetables
Herb mayonnaise
z ½ cup whole egg style mayonnaise
z Fresh chives, dill, parsley or coriander, chopped
z Lemon juice
METHOD:
Preheat the barbecue flat-plate or char-grill plate to hot. Score the inside of the butterflied lamb leg in a criss-cross fashion.
Combine the rosemary, oil and mustard and smear over both sides of the lamb.
Place the lamb on the barbecue and reduce the heat to moderately-hot. Cook the first side of the lamb for 20 minutes, turn and then cook for a further 20 minutes.
Remove the lamb and cover it loosely with foil. Allow to rest for 15 minutes before slicing.
Serve the lamb with vegetables and the Herb mayonnaise.
To make herb mayonnaise:
Combine the mayonnaise with freshly chopped herbs and a squeeze of lemon juice.

Complete Physio in Goolwa and Victor Harbor would like to welcome new physiotherapist Aaron Wilson to the practice.
Aaron has moved to the area after spending some time practicing in Ceduna and is looking forward to continuing his passion for treating people with sports injuries and chronic back injuries.
He is an ardent cricketer and fisherman and is hoping to learn how to surf sometime in the near future.

Beach hair tips:
To keep your hair looking great while you're on an extended holiday at the beach (or going there every day), rinse the saltwater and products out of your hair as soon as you return home.
It only takes a few minutes but doing so goes a long way toward helping you have the best beach hair possible.
The sun can cause damage to your hair so it's a good idea to learn ways to protect your hair when at the beach.
Take along an anti-frizz product.
If you have curly hair then a straightening cream work well.
