Tony Mitolo’s pizzeria is only one year old, but the story behind his love of pizza is much deeper than the thin-base crusts that shoot out of his oven.

Tony opened Pizzateca on Chalk Hill Road just in time for last year’s Sea and Vines Festival. Word of his “ancient” method of making pizza has spread like wildfire - and this year, Pizzateca’s Sea and Vines event will be a sell-out.

Pizzateca will fire up its Italian pizza oven for the 2017 Sea and Vines Festival, which celebrates a quarter of a century on the June long weekend.

On June 11, 12 and 13, McLaren Vale producers will host long lunches, cooking demonstrations and wine-tour themed events.

On Sunday, June 11, Pizzateca will host a six-course Italian Agriturismo feast, with home-made cuisine and live entertainment.

Tony said Agriturismo was a concept where small Italian producers invited guests to their farms and properties to serve food and wine.

“Agriturismo is a style of eating where you’re basically going to someone else’s house, and that’s the format we’re going for – home-style,” Tony said.

“My nonno used to have quite high-profile pizza businesses in the Adelaide in the 60s, and my dad used to work with him.

“My father built an oven at his house 15 years ago, so we were always playing around making pizzas.”

Tony developed his style of pizza from travelling Italy and the United States, with inspiration from his nonno.

“Our style of pizza we discovered in the states.

“My Nonno’s pizza was really thick, but this style of pizza is a real thin base with a thick crust. It requires a difficult technique, practicing and cooking by hand.

“It’s a very raw and ancient way of cooking pizza, which has been around for 200 years.”

Tony has been wrapped with local support since opening Pizzateca, and praises the collaborative nature of the McLaren Vale food and wine industry.

“When we started I was primarily making pizza, but now I kind of float around the restaurant. I’m trying to learn all aspects of the business.”

McLaren Vale Grape Wine and Tourism Association general manager Jennifer Lynch said the three-day festival enticed visitors to stay in the region. “We are looking forward to delivering a Festival that caters to all ages and interests.”
